I swear, I’m not a drinker. Really. I have two margaritas a year. Well, until this year. I had two margaritas last night. And one the night before, and another two weeks before that. So, yeah – the two margaritas a year thing is out the window.
The only thing I drink is a strawberry margarita. Maybe I’m fooling myself into thinking it’s just a slushy. But the calories and cost can knock you for the same loop as the tequila… So I set out to make my own margarita. And I found Hungry Girl’s version to be perfect. I found this recipe in the Hungry Girl Happy Hour book.
But first, I went in search of a tequila. I found Familia Camarena Silver at a local liquor store. The manager suggested it as a good quality margarita tequila at a reasonable price. About $1 worth of tequila in each margarita. He also suggested I get some Patrón Citrónge. At $12 a bottle, it ends up about 75 cents a margarita. That’s the only real change I made to the recipe below – I added a half ounce of the Citrónge.
I did double the recipe to make two – one for me, one for hubby – and it was very easy to plop it all in my Cuisinart mini blender. I love this blender! It’s just the right size for drinks, smoothies, etc – plus it will chop up veggies, make pesto, etc.
Now, back to the margarita. It was light and frothy. Not too sweet, and not too chemical tasting – some margaritas I’ve had taste like bio hazard instead of strawberries. And doubling the recipe, we were able to fill two 16 ounce red solo cups (yeah, I didn’t have a margarita glass!). These would be perfect for any time you want a fun cocktail.
I got the Crystal Light Strawberry-Kiwi packets – finding strawberry flavor was a bit of challenge – my choice was the kiwi or strawberry with added caffeine. I figured tequila was enough – I didn’t need to add some caffeine.
At only 125 calories, and 5 PP value, this is a great treat that won’t break the food budget.
