Recipe Review – Brownie Batter Overnight Oatmeal

I saw this recipe come across my Facebook feed, and people were raving about it.  Tastes just like brownie batter they said.  So I had to try it.  It took me a while to get all the ingredients – but I finally made it last night.  It was easy enough to make, and the ingredients are not that uncommon, just not things I normally stock.

This morning it was nice to wake up with breakfast already made – so I am on the lookout for more make ahead breakfast ideas.  Hubby ate his at home and said it was not bad.  He said it was kinda like a treat.  But I noticed he didn’t eat all of it.  And he’s normally a member of the clean plate club.

I brought my bowl to work and heated it up in the microwave for a minute.  I tasted it, and thought it was a little bitter, so added a packet of Splenda.  It was certainly edible, but it was just a little too rich for breakfast.  And oatmeal is not my favorite of textures anyway.  I could only eat about 1/4th of it.  And tossed the rest.  Unfortunately, it looks like someone threw up in the trashcan at work.  /oops.

This recipe makes 2 large servings at 7 Weight Watcher Points Plus each.  I don’t normally eat 7 points for breakfast – and in the future, if I do make this again, I would divide it up into at least 4 or even 6 servings for even less points.

Brownie batter overnight protein oatmeal

Ingredients

  • 1 cup Unsweetened almond milk
  • 1/2 cup Plain 0% Greek yogurt (or pumpkin)
  • 2 tbs Unsweetened cocoa powder (or more to taste)
  • 1/8 tsp Salt
  • 2 tbs Truvia or 1/4 cup sweetener that measures like sugar
  • 1 cup Old fashioned oats
  • 1/4 cup Protein powder (or additional oats)

Directions

  1. In a small bowl, mix all of the ingredients together. Divide between 2 small bowls, mugs, or mason jars. Cover and refrigerate overnight (or for at least an hour (or more) so the oats soften and absorb the liquid). Top with chopped nuts or topping of choice if desired! Enjoy cold, or microwave for 30-60 seconds to enjoy warm!
